煎雞胸配田園沙律

材料

A. 雞胸

雞胸肉 ⋯⋯⋯⋯⋯⋯ 1 塊
水 ⋯⋯⋯⋯⋯⋯⋯⋯ 500 ml
鹽 ⋯⋯⋯⋯⋯⋯⋯⋯ 2 茶匙
糖 ⋯⋯⋯⋯⋯⋯⋯⋯ 2 茶匙
蒜頭 ⋯⋯⋯⋯⋯⋯⋯ 2 粒
雜香草 ⋯⋯⋯⋯⋯⋯ 1 茶匙
辣椒乾 ⋯⋯⋯⋯⋯⋯ 1 條

B. 沙律

番茄 ⋯⋯⋯⋯⋯⋯⋯ 1 個
生菜(萵苣) ⋯⋯⋯ 100 g
洋葱 ⋯⋯⋯⋯⋯⋯⋯ 1/4 個

C. 沙律醋

洋葱 ⋯⋯⋯⋯⋯⋯⋯ 1/4 個
初榨橄欖油 ⋯⋯⋯⋯ 2 湯匙
醋 ⋯⋯⋯⋯⋯⋯⋯⋯ 2 湯匙
雜香草 ⋯⋯⋯⋯⋯⋯ 5 g
糖 ⋯⋯⋯⋯⋯⋯⋯⋯ 1/2 茶匙
鹽、胡椒 ⋯⋯⋯⋯⋯ 適量
紅椒粉 ⋯⋯⋯⋯ 適量

做法

1. 醃雞胸,將所有材料 A(除了雞胸)放進煲中煮滾,然後放涼;
2. 待鹽水完全放涼後,將雞胸浸入鹽水放進保鮮盒,放冰箱4小時或隔晚;
3. 清洗生菜,切成約尾指大小,放進冰水備用;
4. 焗爐預熱至200度;
5. 從冰箱取出雞胸,隔走水份,用廚房紙吸走多餘水份;
6. 如果雞胸買回來帶皮的話,可先落油煎香雞皮,取其雞油香味,不帶皮的話就直接熱鑊落油煎香兩面,然後放進焗爐焗12-18分鐘(視乎大小)雞胸熟後放旁邊靜止5分鐘;
7. 做沙律醋,切碎洋葱,將所有材料 拌勻,調味;
8. 隔走生菜水份,洋葱切絲,番茄切片放進大盤中加沙律醋拌勻,上碟;
9. 將雞胸切片放在沙律上,再灑點紅椒粉,完成~
・如果洋葱太辣的話,切完洋葱後可以將其沖洗或泡水,可減低其辣度;

Warm Chicken Breast with Garden Salad

Ingredients

Chicken brine

Chicken breast  1 whole
Water  500 ml
Salt  2 tsp
Sugar  2 tsp
Garlic  2 clove
Mix herbs  1 tsp
Dried chilli  1 pc

Salad

Tomato  1 pc
Lettuce  100 g
Onion  1/4pc

Dressing

Onion 1/4 pc
Extra virgin olive oil  2 tbsp
Vinegar  2 tbsp
Mixed herbs  5 g
Sugar  1/2 tsp
Salt Pepper
Paprika powder

Method

1. To make the brine. Put garlic, herbs, chill, salt sugar and water into pot, bring it to boil. Then turn off the heat. let it completely cool down.
2. In a container, put chicken breast in and pour the brine in. Cover with lid and put into the fridge stay for 4 hrs to 1 night.
3. Wash the lettuce, cut into finger size. Put in cold water until serve.
4. To cook the chicken. Take out the chicken from container, use kitchen paper to soak and wipe out the brine.
5. If you bought the chicken breast come with skin. Take it off and put on the pan add some oil to fry to get more flavor from the skin. If not, just add oil to sealed both side, and put into oven in 200c for 12-18min (depend on size). let it rest for 5 mins.
6. To make the dressing.  Dice the onion. Add all ingredients and mix it well.
7. Use a salad spinner to drain out the water. Wash and slice tomato and onion, Put in mixing bowl. Add dressing and mix it well. Put on the plate. 
8. Slice and serve chicken breast on top, sprinkle with paprika powder. done~
