沖縄炒苦瓜
材料
苦瓜 ⋯⋯⋯⋯⋯ 1 個
豬肉 ⋯⋯⋯⋯⋯ 100 g
蛋 ⋯⋯⋯⋯⋯⋯ 3 隻
硬豆腐 ⋯⋯⋯⋯ 1 磚
味醂 ⋯⋯⋯⋯⋯ 1 湯匙
料理酒 ⋯⋯⋯⋯ 1 茶匙
醬油 ⋯⋯⋯⋯⋯ 1 湯匙+1 湯匙
麻油 ⋯⋯⋯⋯⋯ 1 茶匙+1 湯匙
鹽 ⋯⋯⋯⋯⋯⋯ 適量
做法
1. 清洗苦瓜,去籽切片,用1茶匙鹽醃半小時,可減輕苦味,待苦瓜出水後隔走水分;
2. 豬肉切條,用味醂、料理酒、1湯匙醬油、1茶匙麻油醃半小時;
3. 豆腐切粒,熱鑊落油將豆腐煎至金黃,取出並灑些少鹽調味備用;
4. 熱鑊落油,放豬肉大火煎香兩面,落苦瓜炒約1分鐘;
5. 蛋漿加1湯匙醬油打發;
6. 將豆腐、打發好的蛋落鑊,稍為炒一炒,關火加蓋焗半分鐘;
7. 開蓋,淋上1 湯匙麻油再拌勻上碟,完成。
Okinawa style Stir fry bitter melon with pork, tofu and eggs
Ingredients
Bitter melon 1 pc
Pork 100 g
Eggs 3 pc
Firm Tofu 1 pc
Mirin 1 tbsp
Cooking wine 1 tbsp
Soy sauce 1 tbsp + 1 tbsp
Sesame oil 1 tsp + 1 tbsp
Salt
Method
1. Wash the bitter melon, cut it lengthwise, remove the seeds and pith. Slice and add 1 tsp salt to marinate for 30 mins, can reduce the bitter taste. Drain off the water before use.
2. Slice pork, add mirin, cooking wine, 1 tbsp soy sauce, 1 tsp sesame oil marinate for 30 mins.
3. Dice tofu, get ready a hot pan, add oil to fry until golden brown. Drain off the oil seasoning with salt.
4. In the same pan, turn to high heat, add oil, sauté the pork, add bitter melon stir fry for 1min.
5. Crack the eggs, add 1 tbsp soy sauce to whisk.
6. Add tofu and beaten eggs, stir for few times, turn off the heat, cover with lid for 30 sec.
7. Open the lid add sesame oil then give it a toss, done.
