親子丼
材料(2人份量)
去骨雞扒 ⋯⋯⋯⋯⋯ 2 片
雞蛋 ⋯⋯⋯⋯⋯⋯⋯ 2 隻
葱 ⋯⋯⋯⋯⋯⋯⋯⋯ 2 條
洋葱 ⋯⋯⋯⋯⋯⋯⋯ 1/4 個
醬汁
日式高湯 / 雞湯 ⋯⋯ 120 ml
醬油 ⋯⋯⋯⋯⋯⋯⋯ 30 ml
味醂 ⋯⋯⋯⋯⋯⋯⋯ 30 ml
做法
1. 洋葱切薄片,葱白切約1寸展長;
2. 雞扒皮向下放入平底鑊,不用放油(雞皮會煎出很多油),開中火煎至金黃色,不用反轉;
3. 雞皮部分煎好後,取出雞扒,切成約3cm x 3cm的雞塊;
4. 將醬汁所有材料混合;
5. 平底鑊的雞油倒出,留少許將洋葱和葱白略為煎香,倒入醬汁,中火煮滾;
6. 把雞塊沒有皮部分放入醬汁一起煮,轉小火把雞肉煮熟(約2-3分鐘);
7. 雞蛋略拌勻,不用打發,先倒一半蛋汁,蛋汁略凝固後再倒另一半;
8. 全部蛋汁倒入後,煮約30秒或至自己喜歡的熟度,加在白飯上,完成~
Oyakodon
Ingredients (Serving for two)
Chicken thigh (boneless) 2 pc
Egg 2 pc
Spring onion 2 pc
Onion 1/4 pc
Sauce
Dashi or Chicken stock 120 ml
Soy sauce 30 ml
Mirin 30 ml
Method
1. Slice onion, cut white part of spring onion around 1inch.
2. In a shallow pan, do not add oil. Just put the chicken skin side to fry until golden brown.
3. Take out the chicken from the pan, cut in 3cm x 3cm.
4. Mix all the sauce ingredients.
5. Use the chicken fat from the skin to fry the onion and spring onion, add sauce to bring it boil.
6. Put chick meat side into the pan, Turn to low heat cook for 2-3mins until cook.
7. Beat the eggs. Add haft into the pan.
8. When the egg is cook, add the rest of egg. turn off the heat and stir it. Serve on top of rice. enjoy~
