簡易西班牙蛋餅
材料
雞蛋 ⋯⋯⋯⋯⋯⋯⋯⋯ 5 隻
馬鈴薯 ⋯⋯⋯⋯⋯⋯⋯ 1 個
煙肉 ⋯⋯⋯⋯⋯⋯⋯⋯ 2 片
真姬菇(鴻禧菇) ⋯⋯ 約 50 g
菠菜苗 ⋯⋯⋯⋯⋯⋯⋯ 5 棵
車厘茄 ⋯⋯⋯⋯⋯⋯⋯ 6-8 粒
鹽、黑椒 ⋯⋯⋯⋯⋯⋯ 適量
做法
1. 馬鈴薯切條,浸水去除多餘澱粉質;
2. 切去菇的根部、車厘茄切半、菠菜苗切約2cm長,煙肉切條;
3. 雞蛋加一小撮鹽,稍為打發即可;
4. 平底鑊中火煎香煙肉,放菇炒軟後放菠菜苗略炒至軟身,加鹽、黑椒調味,炒好倒入蛋漿中;
5. 同一鑊中火加油煎薯條,加一撮鹽和黑椒作調味,
6. 薯條煎到半透明,鋪平,轉小火,倒入蛋漿,鋪上車厘茄、幾片菠菜葉,加蓋小火炆6分鐘;
7. 熄火焗8-10分鐘,上碟,完成~
・這次用了約 20cm 的平底鑊煎
Easy Spanish Tortilla
Ingredients
Egg 5 pc
Potato 1 pc
Bacon 1 pc
Shimeji mushroom ~50 g
Baby Spinach 5 pc
Cherry Tomato 6-8 pc
Salt, Black pepper
Method
1. Cut potato Julienne, put in a bowl of water.
2. Cut off the bottom of Shimeji, spinach cut in 2cm long, cherry tomato cut in half. Dice bacon.
3. Crack the eggs, add pinch of salt to whisk.
4. In a non stick pan, fry bacon, add Shimeji, spinach, season with salt pepper. After cooked, add them into the bowl with beaten eggs
5. In the same pan, add oil to fry potato until light brown, season with salt pepper.
6. Turn to low heat, pour the egg mixture in, then put cherry tomato and few spinach leaves on top.
7. Cover with lid cook for 6 mins. Then turn off the heat stay for 8-10 mins. Use a spatula to take the tortilla out, serve on plate, done~
